Swiss Chard Tacos

1 lb Salem Road Farms Grass-fed Black Angus ground beef

1 Onion, diced

3 cloves of Garlic, chopped

2 Jalapeno, diced

1 tsp Chile Powder (or more to taste)

1 tsp Cumin Powder

2 tsps Oregano

2 handfuls of Cherry Tomatoes, cut in half

1 bunch of Swiss Chard, leaves and stems sliced thinly, but separately

Cook the ground beef, then drain the oil from the pan and start with a little olive oil to saute the onion and swiss chard stems.  Add the spices and mix.  Add jalapeno and garlic.  Add beef and heat throughly.  Add the swiss chard leaves with a handful of water and a sprinkle of salt.  Add a lid to the pan with a little place for air to leak out. The swiss chard will wilt nicely in one or two minutes.  Add tomatoes. Serve on tortillas.
