Savory Cauliflower & Cabbage Slaw

Ingredients:

1 head  cauliflower florets thinly sliced

1 head  cabbage julienne

1 bunch cilantro chopped

1 bunch parsley chopped

1 bunch green onion chopped

1 tomato chopped

1 orange juiced

1/4 cup balsamic vinegar

6 tbsp olive oil

2 tbsp Zatarain’s Creole Mustard

1 egg

2 tbsp dill

2 tbsp garlic

2 tbsp mint

Salt & Pepper to taste

Prep:

 Grab that cutting board and chop the cauliflower, cabbage, cilantro, parsley, green onion, and tomato. Enjoy this time choppin’: This is your mise en place.

Once you got it all chopped, place into your biggest salad bowl and combined all the chopped veggies.

Everything else in the recipe will be used for the ‘sauce.’ Grab a medium sized mixin’ bowl. (I know that I have a tendency to be messy.)

Juice orange, add vinegar, oils, creole mustard, egg (as a binder to keep from separating), dill, garlic, mint, salt, and pepper taste.

Whisk with fork until well combined.

Pour over chopped veggies. This where one should also taste to add more spice, more oil, more salt or pepper, whatever may be to tweak it to you liking.

Refrigerate over night. Let it rest and absorb the flavors.
