Rhubarb Meringue Dessert

½ cup butter, softened         

2 TBL. flour

1 cup flour                                   

¼ tsp. salt

1 TBL. sugar                                 

½ cup half & half

3 eggs, separated                     

  cups cubed rhubarb 

1 cup sugar                                 

1/3 cup sugar 

Heat oven to 350 degrees. Mix butter, 1 cup flour and 1 TBL. sugar. Press into ungreased baking pan, 9x9x2 inches. Bake 10 minutes and remove from oven. Mix egg yolks, 1 cup sugar, 2 TBLS. flour, the salt and half & half. Stir in Rhubarb. Pour over baked crust layer. Bake about 45 minutes. 

Beat egg white until foamy. Beat in 1/3 cup sugar, 1 TBL. at a time. Continue beating until stiff and fluffy. Spread over rhubarb mixture and bake until light brown, about 10 minutes.
