Raw Zucchini Salad with Lemon and Basil
4 medium zucchini
3 Tablespoons extra-virgin olive oil
1 Tablespoon lemon juice
10 large basil leaves (sliced thin)
- Slice zucchini paper thin. Refrigerate until well chilled.
- When ready to serve, prepare dressing by whisking olive oil, lemon juice, and salt to taste.
- Add dressing and basil. Toss.
