Purple, Golden, & Green

7 purple topped turnips, washed and quartered
2 cups, cooked quinoa with turmeric
4 cups mustard greens, washed, stemmed and torn
3 cloves garlic, smashed
4 tablespoons olive oil
1 tablespoon butter.
salt and pepper, to taste
Directions:
1. Toss turnips in 2 tablespoons olive oil. Season with salt and pepper. Roast in a 350 degree oven till brown, about 15-20 minutes.
2. While turnips cook make the quinoa. In a small pot mix 1 cup quinoa with 2 cups of water and 1 teaspoon of turmeric. Cook till quinoa is done, 10-15 minutes.
3. In a large pot, heat 2 tablespoons olive oil. Add garlic saute 2 minutes, add greens and butter. Season with salt and pepper. Saute till tender about 6 minutes. Add turnips.
4. Serve greens and turnips on top of the quinoa.
