Purple Cabbage Soup

Serves 8-10

 

Ingredients:

1 tablespoon olive oil

1 large onion diced

2 cloves garlic, minced

1 cup carrots, peeled and diced

1 cup celery, diced

1 can of diced tomatoes

1 small head of cabbage (prferably purple), chopped into bite sized pieces

2 teaspoons dill (or more to taste)

1 teaspoon oregano

dash of cayenne pepper-optional

salt/pepper

6-8 cups chicken or veggie broth

 

Place a large pot over medium heat and add oil. Saute the onion and carrots for 7 minutes or so until softened and then add garlic. Next, add the tomatoes, cabbage, herbs, spices, salt and pepper, cook for 5 minutes or so until cabbage wilts slightly. Add the broth and simmer for at least 30 minutes over low heat. Add meat or beans for additional flavor.
