Fresh Fruit Soup

This refreshing summer soup was submitted by friend and loyal Silver Spring customer, Karen.  Thanks!  We can't wait to fire up our blender and refresh ourselves!

 

Ingredients:

  • (3) Peaches
  • 1 Honeydew
  • 1 Cantaloupe
  • cream cheese
  • lime juice
  • ginger
  • creme fraiche (optional)

 

Here are your instructions, directly from Karen (by way of her mother):

 

Pit, peel and cut 3 peaches into bite size chunks.  Peel, seed and cube fruit of one cantaloupe and one honeydew.  Puree fruit in blender (in batches if necessary) with 2 T. soft cream cheese, juice of a lime, 1/2 teaspoon fresh minced ginger, and fresh mint to taste.  (If you want to be really decadent, add 8oz ofcreme fraiche--available at Whole Foods--to the fruit before blending it, and the soup will taste as good as melted HaagenDaz ice cream!)  Serve in chilled bowls like a soup, or in milkshake glasses like a smoothie.  Enjoy!
