Beets N' Oranges

5 beets, roasted
3 oranges, supreme
Juice of 1 orange
1. To roast beets, wash beets well. While still wet, wrap each beet in foil. Bake in a dish at 350 degrees for 20-30 minutes. A fork should pierce beet easily.
When beets are cool, skin will slide off. Slice beet to desired size.
2. To see how to supreme an orange, check out http://veganyumyum.com/2007/01/making-pretty-orange-segments/. Be sure to hold onto any juice accumulated from the supremes.
3. Add the juice of one orange to the leftover juices. Place in a skillet and put on high heat until reduced in half.
4. Mix beets, oranges and reduced juices.
