Anna's Granola

With a ton of dried fruit leftover from last year's harvest, this has become a standard feature of our kitchen larder.

5 c. rolled oats
2-3 c. raw nuts (I use a blend of almonds, pecans, and pepitas)
1 c. raw hulled sunflower seeds
3/4 c. sesame seeds
3/4 c. brown sugar, rapidura, or turbinado
2 t. cinnamon
1 1/2 t. ginger
1 t. seasalt
1/2 - 1 c. unsweetened coconut
1 c. dried fruit (peaches, apples, berries, anything!)
3/4 c. unsweetened apple sauce
1/3 c. maple syrup
1/4 c. honey
2 T. olive oil

Preheat oven to 300. Set 2 racks in upper and lower thirds of the oven. Combine oats, nuts, sunflower seeds, sesame seeds, sugar, cinnamon, ginger, salt, and coconut in a large bowl - mix well. Add apple sauce, syrup, honey, and oil - mix well. Spread the mixture evenly on 2 rimmed cookie sheets. Bake 35-40 minutes (one sheet on each rack), **stirring and rotating the granola every 10 minutes** When it's an even golden brown, remove from oven, stir well again, and set aside to cool. As it cools it will harden up. Once granola is cool, add the fruit. Keep in airtight container and serve with raw milk or yogurt - deeeelish!
