Sweet Potato Sausage bake

We really enjoy a simple sweet potato sausage bake using sweet potato fingerlings.

Grease a pan of appropriate size for the number of servings you are making.

Wash and slice or chop sweet potatoes and lay in pan (no need to peel).  Sprinkle maple sugar, maple syrup,
or brown sugar over and shake a little salt evenly over the whole pan. 
Add chopped onion or apple if you wish.  Crumble uncooked sausage on top. Cover and bake at 350 F for about 45 minutes, depending on how big your chunks are.
