Roasted Parmesan Sweet Potatoes
2 large sweet potatoes, cubed
2 large cloves garlic, minced
2 Tbsp. extra-virgin olive oil
2-3 Tbsp. Parmesan cheese, finely grated
1/2 tsp. dried thyme
Salt and pepper to taste
Preheat oven to 400 degrees. Line baking sheet with parchment paper.
Place all ingredients in a medium-sized bowl. Mix to combine. Transfer to baking sheet and spread in a single layer.
Bake for 40 minutes, or until potatoes are easily pierced. If desired, broil for a few minutes to brown. Serve immediately.
