Cilantro Dip

1 bunch of cilantro, long stems trimmed

2 cloves of garlic, chopped

2 ½ Tablespoons of water

½ Tablespoon of mayonnaise

1 ½ Tablespoons of red wine or white vinegar

3 Tablespoons of lemon juice

3 Tablespoons finely chopped sweet onion

3 tablespoons of olive oil

1 small dried chili, crumbled

Place cilantro, garlic, water, mayonnaise, vinegar, and lemon juice in a food processor. Process until finely chopped but not pureed. Add olive oil, onion, and dried chili. Pulse several times until just combined but not emulsified. Transfer to a bowl. Refrigerate for at least 30 minutes. Great with corn chips or pita chips
