Zucchini Bread
Zucchini Bread
3 eggs
1 c. oil (or ½ c. oil and ½ c. applesauce)
2 c. sugar
2 c. grated zucchini
3 c. flour
1 t. soda
1 t. salt
3 t. cinnamon
¼ t. baking powder
2 t. vanilla
Mix eggs, oil, sugar and grated zucchini. Add the rest of the ingredients. Divide batter into two greased 9 x 5 x 2” loaf pans. Bake for 1 hour at 325 F.
