Greens Storage Tips

Contributed by CSA Member Vicki Shellhammer

I have had great luck with keeping your greens fresh for what seems like very extended periods, and wanted to share what works for me in case others might benefit from the information.

Whenever my share included loose greens of any kind, as soon as I get home, I transfer them from the plastic bag to plastic containers that I've recycled from when I buy field greens at the grocery store during the winter. These are clear plastic containers with snap-on lids and they come in small and large sizes. I line the bottom of the container with one half-sheet of paper toweling, and then put the greens loosely into the container. I put another half-sheet of paper towel on the top of the greens, then snap the container closed. I've had greens last for more than a week by storing them this way. In fact, I store other veggies this way, such as baby bok choy, and anything with leafy parts. The trick seems to be the paper towels--they absorb excess moisture, but still keep the veggies fresh. The containers are clear plastic, so it's easy to see what's inside, and also keep an eye on spoilage.

I have been determined not to have one single thing I get from your farm go to waste, and this has been a big help. I've had greens last as long as 2 weeks stored this way.
