SCALLOPS ON A BED OF PEPPERS / AVOCADO SAUCE

Slice 2 red and 2 green peppers thin and saute in a large heavy skillet; stir until tender and put aside. Brush scallops with peanut oil and thread on skewers, turn every 3 minutes on the grill till done. Place the grilled scallops on a bed of the sauteed peppers and top with

 

AVOCADO SAUCE

Mash 1 large avocado with

  • 1 t. fresh lemon juice

  • 2 t. mayonnaise

  • ¼ each salt and cayenne pepper

  • peeled and chopped hard boiled egg

Stir in

  • 1 c. chopped pecans
